As a mom, you are by default a very busy woman. The many hats you wear is guaranteed to not give you enough time to enjoy your life. That is why this great baking hack will help you take back control of your life and enjoy one of life’s pleasures guilt-free!
This lemon cake does not discriminate, you can bake it anyday, anytime and it is the most dependable, fail-proof recipe ever!
You don’t need any fancy equipment just your blender, disposable cups, a whole lemon, flour, sugar, vegetable oil, eggs, milk… what else do you have in your kitchen cabinet?
Tools:
Blender
Disposable cups
Any oven-safe dish (if you dont have a baking pan)
table spoon
Recipe:
1 seedless lemon (please take out the seeds ooooo!) diced into cubes
Flour 2 disposable cups
Sugar 1disposable cup
Baking Powder 1tablespoon
Eggs 3 medium pieces
Vegetable Oil 1/3 disposable cup ( just eye ball it, and you’ll be fine)
Milk 1/4 disposable cup
Vanilla (just a splash)
Method:
To your blender, add the diced seedless lemons. Please make sure it is seedless
Add sugar, 3 eggs, veg oil, milk and vanilla all at once and blast it in the blender till very, very smooth.
Then add your baking powder to your flour and pour into your blender.
Be careful not to blend too much, just a quick blitz so that the gluten in the flour is not overworked.
use a spoon or wooden spoon to mix together and pour into a greased or lined pan or oven-safe dish.
Bake in a preheated oven at 180c for 20mins and it’s ready!
If you want it golden brown, leave for another 5mins.
Bring it out and let it cool slightly before serving with cold beverage like I did or a nice tarty fruit compote.
